55 Days. Heirloom. Quite delicious cool season crop. Nothing beats that first Spring harvest of spinach. Direct sow as soon as soil can be worked in Spring. Can also be started indoors in late Winter for transplanting in mid-Spring. Bolts in heat. Sow again in early Fall for the sweetest spinach you've ever tasted and fresh greens all Winter. Excellent for overwintering and the earliest Spring crops. Cover is recommended for ease of harvesting but we have had it thrive under feet of snow unscathed in our zone 7a garden. Prefers fertile soil, consistent moisture, and full to part sun. Use raw, sauteed, in juicing, or in your favorite recipes. Freeze or dehydrate for storing.
